  • 1 pound (454 g) yellow potatoes cubed
  • Cooking oil spray
  • Paprika salt and pepper, for seasoning
  • 8.5 ounce (241 g) can sweet corn
  • 1/4 cup (38 g) cotija cheese crumbled
  • 1/4 cup (4 g) fresh cilantro chopped
  • 1 medium jalapeno sliced
  • 3 tablespoons (44 ml) mayonnaise
  • 3 teaspoons (15 ml) freshly-squeezed lime juice
  • 1/4 teaspoon (0.5 g) chili powder
  • 1 lime sliced into wedges

Instructions
 

  • Season the potatoes with paprika, salt and pepper. Spray them with cooking oil and place them in the air fryer basket. Air fry on 400° F(200°C) for 12 minutes, shaking the basket once or twice during cooking.
  • Transfer the potatoes to a serving platter. Top with corn, cotija, cilantro, and jalapenos.
  • Mix together the mayonnaise, lime juice and chili powder until smooth.
  • Pour the sauce over the potatoes. Sprinkle on more chili powder and serve with a lime wedge.
