Season the potatoes with paprika, salt and pepper. Spray them with cooking oil and place them in the air fryer basket. Air fry on 400° F(200°C) for 12 minutes, shaking the basket once or twice during cooking.
Transfer the potatoes to a serving platter. Top with corn, cotija, cilantro, and jalapenos.
Mix together the mayonnaise, lime juice and chili powder until smooth.
Pour the sauce over the potatoes. Sprinkle on more chili powder and serve with a lime wedge.
