Air Fryer Sweet & Sour Chicken
Equipment
Ingredients
- 1 1/2 pounds (680 g) chicken thighs cut in bite-size pieces
- 1/2 cup (64 g) cornstarch
- 1 cup (237 g) pineapple chunks
- 1 red bell pepper cut in bite-size pieces
- 1 green bell pepper cut in bite-size pieces
- 1/2 yellow onion cut in bite-size pieces
- 2 cups (316 g) cooked rice for serving
- Sesame seeds for garnish
For the sauce:
- 1/2 cup (110 g) brown sugar
- 1/4 cup (59 ml) apple cider vinegar
- 1/4 cup (59 ml) ketchup
- 1/2 tablespoon (7 ml) less-sodium soy sauce
- 1 clove garlic minced
Instructions
- Add the chicken to a resealable bag. Add the cornstarch and shake the bag until the chicken is fully coated.
- Spread the chicken in the air fryer basket in an even layer so they don’t overlap. Spray well with cooking oil.
- Air fry at 380°F (190°C) for 12 mins, shaking the basket halfway through. Chicken should be golden brown and crispy.
- Transfer chicken to a mixing bowl.
- Add the pineapple and veggies to the air fryer basket and cook at 380°F (190°C) for 7 mins, shaking the basket halfway through. When done, transfer to the mixing bowl with the chicken.
- Add sauce ingredients to a small pan and stir to combine. Cook over medium-high heat for 3-5 mins, until thickened.
- Pour the sauce over the chicken and veggies and toss to coat. Serve over rice with sesame seeds as garnish.
