Equipment

Ingredients
 

  • 1 1/2 pounds (680 g) chicken thighs cut in bite-size pieces
  • 1/2 cup (64 g) cornstarch
  • 1 cup (237 g) pineapple chunks
  • 1 red bell pepper cut in bite-size pieces
  • 1 green bell pepper cut in bite-size pieces
  • 1/2 yellow onion cut in bite-size pieces
  • 2 cups (316 g) cooked rice for serving
  • Sesame seeds for garnish

For the sauce:

  • 1/2 cup (110 g) brown sugar
  • 1/4 cup (59 ml) apple cider vinegar
  • 1/4 cup (59 ml) ketchup
  • 1/2 tablespoon (7 ml) less-sodium soy sauce
  • 1 clove garlic minced

Instructions
 

  • Add the chicken to a resealable bag. Add the cornstarch and shake the bag until the chicken is fully coated.
  • Spread the chicken in the air fryer basket in an even layer so they don’t overlap. Spray well with cooking oil.
  • Air fry at 380°F (190°C) for 12 mins, shaking the basket halfway through. Chicken should be golden brown and crispy.
  • Transfer chicken to a mixing bowl.
  • Add the pineapple and veggies to the air fryer basket and cook at 380°F (190°C) for 7 mins, shaking the basket halfway through. When done, transfer to the mixing bowl with the chicken.
  • Add sauce ingredients to a small pan and stir to combine. Cook over medium-high heat for 3-5 mins, until thickened.
  • Pour the sauce over the chicken and veggies and toss to coat. Serve over rice with sesame seeds as garnish.
