1 1/2pounds(680g)chicken thighscut in bite-size pieces
1/2cup(64g)cornstarch
1cup(237g)pineapple chunks
1red bell peppercut in bite-size pieces
1green bell peppercut in bite-size pieces
1/2yellow onioncut in bite-size pieces

For the sauce:
1/2cup(110g)brown sugar
1/4cup(59ml)apple cider vinegar
1/4cup(59ml)ketchup
1/2tablespoon(7ml)less-sodium soy sauce

Add the chicken to a resealable bag. Add the cornstarch and shake the bag until the chicken is fully coated.
Spread the chicken in the air fryer basket in an even layer so they don’t overlap. Spray well with cooking oil.
Air fry at 380°F (190°C) for 12 mins, shaking the basket halfway through. Chicken should be golden brown and crispy.
Transfer chicken to a mixing bowl.
Add the pineapple and veggies to the air fryer basket and cook at 380°F (190°C) for 7 mins, shaking the basket halfway through. When done, transfer to the mixing bowl with the chicken.
Add sauce ingredients to a small pan and stir to combine. Cook over medium-high heat for 3-5 mins, until thickened.
Pour the sauce over the chicken and veggies and toss to coat. Serve over rice with sesame seeds as garnish.
Notes
Change out the bell peppers and onions for your favorite vegetables. If you don't like pineapple you can replace it with something else or just leave it out.
Coating the chicken pieces in cornstarch before air frying gives them a wonderfully crispy exterior without the need for deep-frying.
Arrange the chicken pieces in a single layer with space between them in the air fryer basket. Overcrowding can lead to uneven cooking and less crispy results. Cook in batches if necessary.
