Ingredients You’ll Need
- Cauliflower: The main ingredient for this recipe is cauliflower. I have used a medium-sized head of cauliflower. Cut it so that the florets separate. When buying cauliflower for this recipe, make sure you choose a fresh head. It shouldn’t have green or brown colored patches on it.
- Milk: To smooth out the batter. You can use soy or almond milk as a replacement
- All-purpose flour: All-purpose flour sets the base for the batter. It is easily available in every grocery store and is a staple in every kitchen pantry.
- Garlic powder: It adds a garlicky, savory and intense flavor to the batter.
- Spanish paprika: Spanish paprika has a sweet, smoky flavour with a heat we all love.
- Salt and ground black pepper: To taste.
- BBQ sauce: Use your favorite or try making this homemade version.
- Dipping Sauce: Optional, though who doesn’t love a good dipping sauce. Try it with Ranch or Blue cheese.
Equipment Information
- Air fryer: I use the 5.5-quart Ninja MaxXL basket-style air fryer. Angie uses this 5-quart Cosori Pro LE air fryer. We also both occasionally use the Ninja Woodfire Outdoor Grill that has an air fryer setting.
- Kitchen tongs: It’s very easy to remove food from your air fryer with kitchen tongs. I use these kitchen tongs that are silicon coated so they don’t scratch the interior.
- Parchment paper rounds: These are optional. The parchment paper will keep the batter from sticking to the air fryer basket.
Helpful Tips
- You can substitute the flour for almond flour or gluten-free flour, if you want. You can always cook them without the batter like this crispy cauliflower.
- Cut the cauliflower in fairly large pieces, about the size of a golf ball.
- Use parchment paper round into the bottom of the air fryer. This will prevent a big mess when the batter gets baked onto the basket. If you don’t make sure to spray the air fryer basket well with cooking spray to keep the cauliflower from sticking.
- Make sure the pieces don’t overlap or touch each other. If they stick together, they’ll be difficult to pull apart.
Oven Directions
Don’t have an air fryer? No problem!
Follow steps 1-5 below. Then line a baking sheet with parchment paper. Preheat your oven to 400° F (200° C). Bake for 20 minutes until the cauliflower is golden brown.
Remove it from the oven and dump it all into the bowl with the BBQ sauce. Toss or stir it up to get all the pieces coated. Then place the cauliflower back onto the baking sheet and put it back in the oven for another 10 minutes.

Ingredients
- 1 head of cauliflower approx. 4 cups of floret
- 1 cup (237 ml) milk if you’re vegan use almond or soy milk
- 3/4 cup (94 g) all-purpose flour
- 1 teaspoon (3 g) garlic powder
- 1 teaspoon (2 g) paprika
- 1/4 teaspoon (1.5 g) salt
- 1/4 teaspoon (0.5 g) ground black pepper
- 1/2 cup (118 ml) BBQ Sauce homemade or store-bought
Instructions
- Wash and cut the cauliflower into bite-sized pieces.
- In a large bowl, whisk the flour, milk, and spices until most of the lumps are gone.
- Place a piece of parchment paper on the bottom of the air fryer basket, or spray it with cooking spray.
- Dip the cauliflower in the batter. You can do this one by one or in batches.
- Shake off the excess batter and place the cauliflower in a single layer in the air fryer basket, not touching each other.
- Cook at 350º F (175º C) for 15 minutes. They don’t need to be flipped halfway through.
- Put the BBQ sauce in a large bowl for when the cauliflower is done.
- Remove it from the air fryer when it is golden brown and dump it all into the bowl with the BBQ sauce. Toss or stir it up to get all the pieces coated.
- Place the cauliflower back into the air fryer basket and cook for another 5 minutes.
