Equipment

Ingredients

  • 2 teaspoons (10 ml) cooking oil
  • 3 oz (85 g) ground chicken
  • 2 cloves garlic minced
  • 2 green onions finely chopped
  • 1 carrot finely chopped
  • 1 1/2 teaspoon (6 g) sugar
  • 1 tablespoon (15 ml) fish sauce
  • 1 tablespoon (15 ml) oyster sauce
  • 1 ounce (28 g) rice vermicelli noodles cooked according to the package
  • 1 tablespoon (15 ml) water
  • 8 spring roll wrappers
  • Cooking oil spray
  • Sweet chili sauce for dipping

Instructions

  • Add the cooking oil to a frying pan over medium heat. Add the chicken and cook until nearly done, about 5 minutes. Add the minced garlic to the pan.
  • Add the green onions, carrot, sugar, fish sauce, and oyster sauce to the pan. Stir and cook for one minute.
  • Add the rice noodles and cook for another 2 minutes. Remove from heat.
  • Arrange a wrapper with one point facing you. Spoon about 2 tablespoons of the filling onto the center of the wrapper. Fold the left corner over the filling. Fold the right corner over that. Fold the corner facing you over the top of the filling. Brush some water onto the remaining edges. Finish rolling tightly.
  • Place the spring rolls into the air fryer basket, seam-side down. Spray with cooking oil.
  • Cook on 380°F (195°C) for 8 minutes, flipping and spraying halfway through cooking, until the spring rolls are crisp and golden brown on all sides.
  • Serve with sweet chili sauce.

Notes

  • When buying spring roll wrappers, make sure they are suitable for frying. Some are specifically labeled as such, and using the wrong type may result in a different texture.
  • Keep the spring roll wrappers covered with a damp towel as you work. This prevents them from drying out, making them easier to handle and less prone to tearing.
  • Avoid overstuffing the spring rolls.
  • Give the spring rolls some space in the air fryer basket to allow proper air circulation.
  • If it's your first time making spring rolls, don't be discouraged if the first one or two aren't perfect.

All air fryers have different wattage and may cook at different rates. You may need to adjust the time or temp for the best results.
