Ingredients
 

  • 2 large baking potatoes
  • 1 teaspoon (5 ml) olive oil
  • 2 teaspoons (12 g) salt divided
  • 1 teaspoon (2 g) ground black pepper divided
  • 1 tablespoon (14 g) butter
  • 1/2 cup (57 g) shredded cheddar
  • 2 green onions chopped
  • 1/4 cup (60 g) sour cream or Ranch dressing

Instructions
 

  • Clean and pat dry the potatoes.
  • Coat the outside with olive oil and sprinkle with half the salt and black pepper. Place the potatoes in the air fryer basket.
  • Cook at 390°F (200°C) for 30 minutes, turning halfway. Squeeze the potato or piece it with a toothpick. If it still has a bit of give, cook for an additional 5-10 minutes.
  • Remove from the air fryer and allow to cool for 10 minutes.
  • Cut them in half and carefully scoop out the flesh to 1/4” of the skin. Place the scooped out insides into a mixing bowl.
  • Add the remaining salt and pepper, butter, and half of the shredded cheese. Stir well to combine. You can mix this by hand or with a hand mixer.
  • Scoop the mixture back into the potato shells. Place them back into the air fryer basket and cook on 390°F (200°C) for an additional 8 minutes.
  • Garnish with green onions, sour cream, or Ranch dressing, and serve.

All air fryers have different wattage and may cook at different rates. You may need to adjust the time or temp for the best results.
