Equipment

Ingredients

  • 2 pounds (1 kg) chicken wings

For the marinade

  • 1/4 cup (14.8 ml) low sodium soy sauce
  • 2 tablespoons (6 g) brown sugar
  • 2 tablespoons (1 g) rice vinegar
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon ground black pepper

For the teriyaki sauce

  • 1/4 cup (59 ml) low sodium soy sauce
  • 2 tablespoons (24 g) brown sugar
  • 1/2 tablespoon (7.4 ml) rice vinegar
  • 1/2 tablespoon (7.4 ml) honey
  • 1 teaspoon (4.9 ml) ginger freshly grated
  • 1 clove garlic minced
  • 1/2 teaspoon (2.5 ml) sesame oil
  • 1 tablespoon (15 ml) water
  • 1 tablespoon (8 g) cornstarch

Instructions

  • Mix soy sauce, brown sugar, rice vinegar, mustard, garlic, and pepper in a quart-sized resealable plastic bag. Shake to combine.
  • Add the chicken wings and shake gently to coat. Refrigerate for at least 2 hours or overnight.
  • Remove the wings from the marinade and pat dry. Place the chicken wings in the air fryer basket and cook on 390-400˚F (200˚C) (adjust to your air fryer) for 15 minutes, shaking the basket or flipped over the wings halfway through cooking.
  • For the teriyaki sauce, combine all sauce ingredients, except the cornstarch and water, in a small saucepan, and bring to a boil, about 2 minutes.
  • Mix together the cornstarch and water in a small bowl. Once the mixture is boiling, add the cornstarch slurry and whisk constantly as the sauce thickens.
  • Once thick, remove from heat and let cool.
  • After 15 minutes of cooking, baste the chicken wings with teriyaki sauce. Continue cooking for 5 minutes. Turn the wings over and baste again. Continue cooking for 5 minutes, or as necessary to get the wings crispy.
  • Check the internal temperature of the wings with a meat thermometer to be sure they’ve reached at least 165 degrees F.

Notes

  • Bake time will vary based on the size of your air fryer and how many wings you put in the basket. You may need to increase the cook time for larger wings or when cooking more than 2 pound at a time.
  • There is no need to spray the basket or preheat the air fryer before cooking.
  • You can cook chicken wings whole or halved (cut apart at the elbow).
  • Pat the wings dry before adding the oil and seasonings. This will help them crisp up better in the air fryer.
  • There are many different sauces you can baste your wings with. Get creative if you want and substitute the teriyaki sauce with bbq sauce, orange sauce, or honey sriracha sauce.
  • Air fryers come in different wattages, which can affect their cooking power. You may need to cook your food more or less than I do, based on your air fryer's wattage. Times and temps are a general guideline.

All air fryers have different wattage and may cook at different rates. You may need to adjust the time or temp for the best results.
