Remove the pork roast from the refrigerator 30 minutes before cooking. Coat the roast with olive oil. Mix together the seasonings in a bowl and sprinkle evenly onto roast.
Place roast in the air fryer and cook at 360° F for 40 minutes (or roughly 20 minutes per pound). Check the meat temperature after 35 minutes of cooking. Temperature should be 145° F. If it hasn’t reached this temp, continue cooking in 3 minute increments until done.
Remove roast from air fryer and cover with foil to rest for 10 minutes before serving. This will bring up the temp to 150° F, or medium.
All air fryers have different wattage and may cook at different rates. You may need to adjust the time or temp for the best results.
