Thread the pork belly, zucchini, and onions onto 6” wooden skewers. Season with salt and pepper.
In a small bowl, combine the olive oil, soy sauce, Thai sweet chili sauce, honey, fish sauce and chili oil.
Spray the air fryer basket with cooking oil. Place the pork kebabs in the air fryer basket and spray them with cooking oil. Cook on 380˚F for 6 minutes. Open the basket and baste the skewers with the sauce. Turn them over and baste the other side. Continue cooking for 6 minutes. Baste and turn the skewers again. Continue cooking until the internal temperature of the pork reaches 200˚F, about 15-18 minutes.
All air fryers have different wattage and may cook at different rates. You may need to adjust the time or temp for the best results.
