Wash and scrub the sweet potatoes thoroughly. Pat them dry with a paper towel. Using a sharp knife, make evenly spaced cuts across the top of each sweet potato, being careful not to cut all the way through. Aim for about 1/8-inch thick slices, leaving about 1/4 inch at the bottom intact.
In a small bowl, mix the olive oil, garlic powder, salt, and pepper. Brush this seasoning blend generously over the sweet potatoes, ensuring it seeps into the cuts for maximum flavor.
Preheat your air fryer to 380°F (190°C) for about 5 minutes.
