Ingredients
 

  • 1/2 cup (90 g) cornmeal
  • 1/2 cup (63 g) all-purpose flour
  • 1/3 cup (67 g) sugar
  • 2 teaspoons (10 g) baking powder
  • 1 (1) large egg
  • 1/2 cup (128 g) creamed corn
  • 2 tablespoons (30 ml) oil

Instructions
 

  • Lightly grease a 7” round silicone cake pan.
  • Mix the cornmeal, flour, sugar, and baking powder together in a bowl. Add the egg, creamed corn, and oil. Stir well to combine.
  • Pour the mixture into the cake pan. Set the pan in the air fryer basket.
  • Bake at 300°F for 25 minutes or until a toothpick inserted in the middle comes out clean.
  • Unplug or turn off the air fryer and leave the pan in the air fryer basket for 10 minutes.

Notes

  • It’s difficult to get the center of the cornbread to cook through. If you find that after 25 minutes the center isn’t done, turn off the air fryer and leave the pan in the closed basket for an additional 10 minutes.
  • You can use a box of Jiffy cornbread mix to make air fryer cornbread if you’d rather not make it from scratch. Follow the box instructions to mix the batter, then continue on with the baking instructions above.

All air fryers have different wattage and may cook at different rates. You may need to adjust the time or temp for the best results.
