Whisk together the first 5 ingredients in a large bowl until well combined. Add the bread to the bowl and stir to combine. Let sit for 5 minutes.

Spoon the bread pudding evenly into the ramekins. Mix the remaining cinnamon and sugar together and sprinkle over the top of each ramekin.
